Morning Glory Muffins

Family favorite for early starts on vacation trips.

Ingredients

Amount Ingredient
1 1/4 C Flour
1 tsp Baking Powder
1/2 tsp Baking Soda
1/2 tsp Salt
1/2 tsp Cinnamon
1 C Oats (regular or quick)
1/3 C Milk
3/4 C Apple Sauce
1/4 C Packed Brown Sugar
1 T Oil (Canola)
1 tsp Vanilla
1 Large Egg
3 Medium Carrots
1/2 C Chopped Prunes
1/4 - 1/2 Chopped Walnuts

Substitutions:

  • Any dried fruit may be substituted for prunes, such as raisins or cranberries.
  • Walnuts can be omitted.

Directions

  1. Preheat oven to 400 degrees.
  2. Mix flour, baking powder, baking soda, salt, cinnamon, and oats in a large bowl with a fork.
  3. Fold in the rest of the ingredients. Batter will be lumpy.
  4. Spoon into muffin cups. They will be full.
  5. Bake for 23-25 minutes. Test with a toothpick, toothpick should be dry when removed from muffin.
  6. Immediately remove from pan and let cool on wire baking rack.
