Morning Glory Muffins
Family favorite for early starts on vacation trips.

Ingredients

1 1/4 C | Flour |
1 tsp | Baking Powder |
1/2 tsp | Baking Soda |
1/2 tsp | Salt |
1/2 tsp | Cinnamon |
1 C | Oats (regular or quick) |
1/3 C | Milk |
3/4 C | Apple Sauce |
1/4 C | Packed Brown Sugar |
1 T | Oil (Canola) |
1 tsp | Vanilla |
1 | Large Egg |
3 | Medium Carrots |
1/2 C | Chopped Prunes |
1/4 - 1/2 | Chopped Walnuts |
Substitutions:
- Any dried fruit may be substituted for prunes, such as raisins or cranberries.
- Walnuts can be omitted.
Directions
- Preheat oven to 400 degrees.
- Mix flour, baking powder, baking soda, salt, cinnamon, and oats in a large bowl with a fork.
- Fold in the rest of the ingredients. Batter will be lumpy.
- Spoon into muffin cups. They will be full.
- Bake for 23-25 minutes. Test with a toothpick, toothpick should be dry when removed from muffin.
- Immediately remove from pan and let cool on wire baking rack.
