Ingredients

4 slices | bacon, diced |
2 T | butter |
1 | large onion |
2 T | flour |
4 C | Chicken Stock |
2 | large potatoes, diced |
1 C | half-n-half |
4 C | corn |
1 tsp | black pepper |
1/2 tsp | salt |
1 | red pepper |
1/2 C | green onions, diced |

Directions
- In the bottom of a large pot, brown the bacon.
- Add the butter and melt it.
- Add the onions and cook until translucent over low heat, about 10 minutes.
- Add flour, stirring for 5 minutes.
- Add stock and potatoes and cook until potatoes are tender (~15 minutes).
- Add corn, half-n-half, salt and pepper and stir. Cook for 5 minutes stirring often
- Add bell pepper and scallions, optional ingredients and cook until pepper is tender.
- Serve immediately and garnish with cilantro or parsley.
