Ingredients

Amount Ingredient
4 slices bacon, diced
2 T butter
1 large onion
2 T flour
4 C Chicken Stock
2 large potatoes, diced
1 C half-n-half
4 C corn
1 tsp black pepper
1/2 tsp salt
1 red pepper
1/2 C green onions, diced

Optional: | Amount| Ingredient | |-- | --| | 1 tsp | red pepper flakes | | 1/4 tsp | ground coriander | | 1-2 T | cilantro or parsley |

Directions

  1. In the bottom of a large pot, brown the bacon.
  2. Add the butter and melt it.
  3. Add the onions and cook until translucent over low heat, about 10 minutes.
  4. Add flour, stirring for 5 minutes.
  5. Add stock and potatoes and cook until potatoes are tender (~15 minutes).
  6. Add corn, half-n-half, salt and pepper and stir. Cook for 5 minutes stirring often
  7. Add bell pepper and scallions, optional ingredients and cook until pepper is tender.
  8. Serve immediately and garnish with cilantro or parsley.
